Toss out the pasta and reach for the zucchini! Seriously. It’s amazing and it’s healthy plus, you’ll enjoy the taste too. I’m gluten free so pasta really isn’t my thing anymore, even though I know they make gluten free pasta, it’s just not the same. Only recently did I discover zucchini pasta and I’m hooked!
For this recipe, I included leeks, the leeks were in the last basket a few weeks ago. I chopped them up and froze them for later use so today, I threw them into this recipe and it worked great!

First of all, here’s a link to 3 Ways to Cut Leeks which will help you get started. A lot of people compare the taste to onions but I think they taste better than that which is why they taste so great on pizza. My version of the pizza is gluten free and dairy free, feel free to change that to any regular pizza crust or mozzarella cheese topping. I also skipped the sauce because it just doesn’t need it, you can add that too if you’d like. I’m telling you, it’s delicious.
