Easy Zucchini Pasta

Toss out the pasta and reach for the zucchini! Seriously. It’s amazing and it’s healthy plus, you’ll enjoy the taste too. I’m gluten free so pasta really isn’t my thing anymore, even though I know they make gluten free pasta, it’s just not the same. Only recently did I discover zucchini pasta and I’m hooked!

  1. First, wash and prepare your zucchini. The first time I did this, I did not have the slicer above so I used a knife. It was dangerous, it did work but it basically gave me strips of zucchini rather than noodles. The Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer is worth the money to use for this purpose.
  2. Now, after the zucchini is prepared, get a pot of boiling water going on the stove. When it is ready, throw in the zucchini pasta and cook for about 5 minutes. Basically, it is just like spaghetti. Once it is cooked the way you like, drain out the water and place the zucchini in a bowl. Then, simply toss with a little bit of Extra Virgin Olive Oil, salt & pepper to taste. I use Pink Himalyan Salt but you can use what you’d like. That’s it.

Mustard Greens & Leek Frittata

For this recipe, I included leeks, the leeks were in the last basket a few weeks ago. I chopped them up and froze them for later use so today, I threw them into this recipe and it worked great!

  1. Preheat the oven to 350 and place about 1 TBS of olive oil in a large skillet.
  2. Cook your leeks until soft and a little brown.
  3. Add in the chopped mustard greens and cook until wilted.
  4. In a bowl, whisk together the eggs, salt and pepper.
  5. whisk in the remaining 2 tbsp of olive oil and cheese.
  6. Carefully, pour the eggs over the mustard greens and leeks in the skillet. You’re going to let that cook until the bottom and sides set which is just a few minutes. Watch closely so it does not burn, you’ll want to turn the heat down a bit.
  7. Once set, move the skillet into the oven until the eggs set in the middle. This should take about 8 minutes but, mine took a little over 10 minutes.
  8. Cut into pie pieces and serve warm.

Rotisserie Chicken & Leek Homemade Pizza

First of all, here’s a link to 3 Ways to Cut Leeks which will help you get started. A lot of people compare the taste to onions but I think they taste better than that which is why they taste so great on pizza. My version of the pizza is gluten free and dairy free, feel free to change that to any regular pizza crust or mozzarella cheese topping. I also skipped the sauce because it just doesn’t need it, you can add that too if you’d like. I’m telling you, it’s delicious.

  1. First, prepare your crust and preheat the oven according to the directions.
  2. Wash and chop the leeks.
  3. Add a little bit of olive oil to a skillet and saute the leeks until soft. During this process, since I don't use sauce, I sprinkle some of the Daiya cheese onto the pizza crust so that it melts and holds the other ingredients in place,
  4. Top with rotisserie chicken and your leeks once sauted. You can cover it again in more Daiya cheese too if you'd like.
  5. Cook according to the directions on your pizza crust package. This one in particular (pictured) cooks at 400 degrees for 13 minutes.
